Chicken Fajita Wraps

Serves: 4 Prep: 20 mins Cook: 30 mins


Fajita Mix:

  • 2 chicken breasts

  • 1 onion

  • 4 cloves garlic

  • 1 tbsp olive oil

  • 1 40g packet Mexican seasoning

  • 400g tin black beans

  • 400g tin corn

  • 1 yellow pepper

Wrap & Filling:

  • Whole meal wraps

  • Cos lettuce

  • Halved cherry tomatoes

  • Cheese (minimal)


  1. Prepare you fajita mix for cooking by cutting chicken into strips, dicing onion, finely chopping garlic, draining beans and corn, and chopping the pepper into small cubes.

  2. On medium heat put olive oil in large fry pan then add onion and garlic to sauté until golden for around 3 minutes. Add chicken breast strips with half a packet of Mexican seasoning and cook on medium heat for 6 minutes or until no longer pink on outside.

  3. Add the black beans to the mix, along with corn, yellow pepper, and the rest of the Mexican seasoning. Cook with lid on over a medium heat for 15 minutes.

  4. Meanwhile, prepare the wrap filling by slicing the cos lettuce, halving the cherry tomatoes, and grating a bit of cheese.

  5. Once the fajita mix is cooked serve immediately on warm whole meal wraps and add your fillings.
