Healthy Pancakes

Serves: 2 Prep: 5 mins Cook: 15 mins


  • 50g whole meal self raising flour

  • 50g oat flour

  • 2 eggs

  • 150ml almond milk

  • 1 tsp butter

  • Toppings: Greek yogurt, berries, maple syrup (sugar free)


  1. Blend the oats to create an oat flour, then mix in a bowl with the self raising flour.

  2. Whisk the eggs in a bowl then add to the dry ingredients.

  3. Gradually pour the milk into the mixture, mixing as you go to ensure no lumps.

  4. Add ½ tsp butter into a large pan allowing it to melt, then pour mixture into 20cm sized pancakes and cook on medium heat until small bubbles start to form. Carefully flip the pancakes and allow to cook for around a minute or until golden on both sides. When you get half way through the mixture add the other ½ tsp butter into the pan and continue cooking the pancakes.

  5. Once the pancakes are cooked, top with Greek yogurt, berries, and maple syrup.
