Homemade Granola

Serves: 15+ Prep: 5 mins Cook: 15 mins


Ingredients

– 200g walnuts – 200g oats – 100g mix seeds – 4 tbsp coconut oil – 3 tbsp honey

Optional Extras (extras don’t get added until after cooking): – 50g cocoa nibs – 50g flaxseed – 30g rice puffs – 50g chia seeds – 50g dried fruit


Method

  1. Preheat oven to 170C fan forced. Line large baking tray with baking paper.

  2. Blend walnuts and seeds to form powder and then add to large mixing bowl with oats and stir.

  3. If coconut oil is hard, melt it in a mug for 30 seconds in microwave then pour into dry ingredients along with honey. Stir wet and dry ingredients together well.

  4. Spread mixture onto baking tray and put in oven.

  5. After 5 minutes take the tray out oven and use a spoon to mix the mixture around the tray then pop back in the oven (the top will have started to go golden so we need to allow the rest of the mixture to bake too).

  6. Do this every 3 minutes thereafter, until the granola has turned golden throughout most the mix. I usually take it out to mix about 3 times, which takes 15 minutes in total cooking time, but keep an eye on it as your oven might be slightly different and you don’t want your granola to burn.

  7. Once cooked, leave mix on tray to cool for 1 hour before storing in airtight jar/ container in fridge. Once it has cooled you can also add your extras to the mix.

Note: This can keep in the fridge for about 2-3 weeks.
