Flavor Packed Omelette

Serves: 2 Prep: 5 mins Cook: 18 mins


  • 4 eggs

  • 6 slices lean ham

  • 10 cherry tomatoes

  • 1 cup spinach

  • 3 mushrooms

  • ½ onion

  • 25g grated cheese

  • 2 tbsp olive oil

  • Salt & pepper

  • 1 tbsp chives


  1. Cut the ham into small squares, the cherry tomatoes into quarters, the mushrooms into small cubes and dice the onion.

  2. Place a large fry pan on high heat with 1 tbsp olive oil add your chopped veg, spinach and ham.

  3. Stir periodically for 12 minutes or until golden. Take off heat and set aside in a bowl.

  4. Whisk the eggs, wipe the pan with a paper towel, and put the pan on a low to medium heat with a tbsp of olive oil. Pour in the egg and cook for 3 minutes with lid on, then add the veg and ham to one half of the omelette and sprinkle on the cheese.

  5. Fold the omelette over the veg and cook for a further 3 minutes with lid on pan.

  6. Slide onto a plate, cut in half for 2 people and season with salt, pepper and finely chopped chives.
